Replacing butter with… algae?
TerraVia, the company previously known as Solazyme, was showing its lipid-rich whole algae which can be used to replace eggs and dairy-based fats and oils in bakery applications.
Available in a golden or cream-coloured powder form, the AlgaVia powders has a healthy fat profile with 69% monounsaturated fat, 13% polyunsaturated fat and 19% saturated fat.
The powders are vegan, cholesterol- and allergen-free and contain the macronutrients lutein and zeaxanthin.
For US consumers TerraVia also has a range of consumer-facing algae oils that it says are price competitive with premium olive oil, although unlike the whole algae powders which have been approved for the European market, TerraVia’s algae oil has not yet got past the EU’s regulatory hurdles.
