Cold brew coffee in a concentrate
Cold brew coffee is everywhere in the US – according to Mintel data it has experienced 115% year-on-year growth from 2014 to 2015 and not only is this set to increase but it's also tipped to be big in Europe.
Flavours and ingredients manufacturer Synergy is tapping into this trend with its Synergy Pure 100% cold brew concentrate.
Brewed using Brazilian coffee beans, the concentrate is ideal for ready-to-drink beverages but could also be used to flavour dairy products such as yoghurt and ice-cream.
Applications manager at Synergy Angie Lantman told FoodNavigator: “Cold brew is big and growing rapidly. It’s popular in coffee shops on a small scale but it’s starting to trend up into retail. So as an ingredients company we really wanted to get into it as we can process it on a large scale.”
Getting the right flavour profile can be costly and time-consuming, said Lantman, as the coffee needs to be brewed for at least 12 hours - it can be up to 24 - and takes up a lot of tank space. Available in liquid form, Synergy’s cold brew concentrate contains 22.5 servings and allows large scale manufacturers to achieve authentic cold-brew flavours in an instant.
