Sugar-free plant milks for savoury cooking
It may not be strictly speaking savoury, but Spanish plant-based manufacturer Ecomil was plugging its sugar-free plant milks at Natexpo in Paris last month.
The milks have a neutral taste profile and the newest additions to the range included sesame, hemp, quinoa and a blend of almond and chia.
The Murcia-based manufacturer was using it to make almond milk gazpacho with black pepper and garlic, a twist on the traditional dish ajo blanco.
Ecomil also has a professional B2B range for culinary use that comes in larger formats and can be heated without curdling.
