Flavour specialists Quest Food International this week announced the launch of Vanilla Analogs, a recently formulated vanilla flavour profile. "We have developed sophisticated analytical methods to identify previously undiscovered key character impact compounds in the vanilla extracts," commented Mairi Coia, vanilla business development manager at Quest. Quest marketing director Steve Bodicoat added, "Manufacturers have had a difficult choice in the past - either to use the scarce raw material with an unstable supply chain or compromise on flavour profile quality. Quest's commitment to the ice cream industry means we will now be able to guarantee vanilla flavour quality and availability." Vanilla is a sensitive aroma extracted from the beans that are the fruits of a tropical plant belonging to the orchid family. The sensitivity is partly due to the small window of time - just a few hours - that this plant's flowers open for pollination before they wither and die. According to Quest its new product will help remove any exposure to fluctuations in the global vanilla supply, provide a greater flexibility in formulation in application and offer value for money compared with extract-based flavours.
