Get ahead with bread
Given the prominence bread has in Europeans’ diet and the fact that crickets are easy to work with in powdered form, bread is a promising category.
“Wheat flour remains the primary ingredient of bread launches in Europe, but recent years have seen growing interest in alternative flours,” says Brockman.
Just a few months ago, Finnish food manufacturer Fazer launched what it called a world first – cricket bread.
With one loaf packing around 70 ground crickets, it has more protein than standard wheat-based bread and, at €3.99 per loaf, is relatively price-competitive with a regular loaf that retails for around €2-3.
