Pasta is another easy way for manufacturers to incorporate ground crickets into a product and improve the nutritional profile compared to the standard durum wheat variety.
Tervens blends chickpea flour with 5% crickets (Acheta domesticus), sourced from Thailand, to manufacture its dried Chickpea and Crickets Fusilli.
Retailing for €5.90 for a 200 g pack, the pasta is protein-rich, high-fibre and has a low glycemic index, it says.
