The trend of brands communicating more openly about their production process has been building for five or six years and is now becoming mainstream.
Williams cited the example of high pressure processing (HPP) claims, saying: “We saw seven times more products carrying HPP claims in the first half of 2015 compared to 2011. This processing technology is being used to differentiate products on the basis of taste and nutrient content.”
On the back of this, age-old processes such as fermentation are being given a new lease of life, as they are natural and easier to understand than modern processes.
