Researchers at the KU Leuven university in Belgium have obtained an innovation grant from the Flemish Agency for Innovation and Entrepreneurship (VLAIO) to test and develop a new unsaturated fat which they claim remains solid at room temperature.
The action of trans-fatty acids may be more damaging to cells than previously thought, as a study reveals the mechanism by which cell death occurs faster, leading to atherosclerosis, heart attacks and strokes.
Using GM techniques to change the activity of a plant enzyme could
convert unsaturated oils in the seeds of a temperate plant to the
more saturated kind usually found in tropical plants like palm oil,
new research suggests.
A diet rich in polyunsaturated and monosaturated fats, such as
those typically found in the Mediterranean diet, may not only
protect heart health but could also reduce the risk of gallstones,
according to a new study.
