Food aisles in supermarkets have seen an explosion of new products with better-for-you claims, including vegan, natural, no or low trans fats, and organic. To compete, food manufacturer need to innovate and offer healthy and/or premium products. Organic products are becoming main stream and consumers ask for a broader range. Organic products should be processed as naturally as possible and the use of additives is more limited than in conventional foods. Organic nutritional yeast and yeast extracts can serve as natural and nutritious alternatives to various additives in food due to their wide variety of functionalities and their significant nutritional value.
