Low sat fat- zero trans fats solution for margarines and shortenings on the market in the next 12 to 24 months?

A product that will stabilize and solidify fats and oils, such as margarines and shortenings, with lower saturated fat and zero trans fats could be on the market in 12 to 24 months, says Adriene Eiffes, marketing specialist for Ashland Specialty Ingredients.

Speaking with Stephen Daniells at the recent IFT Annual Meeting and Expo in Las Vegas, Eiffes claimed that there is not currently a product on the market that can do this, and that we may have to wait up to two years for the solution to be commercially available.

Palm oil is currently being used as an alternative, she said, but “manufacturers are aware of the growing consumer perception of some of the environmental issues of palm oil and let’s also not forget that palm oil is very rich in saturated fats.”
