Functional chocolate puts formulation innovation into overdrive

Demand for protein-forward, reduced-sugar and plant-based indulgence is forcing formulators like Luker Chocolate to balance nutrition claims with the taste and texture consumers expect

Luker Chocolate’s recently launched Chocolate with Whey Protein meets rising consumer demand for better-for-you and functional formulations across the industry.

Consumers’ movement toward weight management and healthier options is changing the ingredients in chocolate, and that’s presenting new challenges for formulation developers, said Ana Vergara, who leads formulation projects for the North American market at Luker Chocolate.

“We know that consumers have changed,” she said. “They now look for pleasure and purpose in the same bite.”

That push for innovative new products is also impacting flavor, Vergara said during a presentation at IFT FIRST 2026 in July. “Chocolate is becoming more than just an ingredient in confectionery; it’s becoming a platform for innovation,” she said.

Challenges in chocolate innovation

Luker’s research into healthier formulations, which includes new sweeteners, proteins and fibers, has come with “a lot of technical challenges” and increasingly shorter timelines for development, she said.

Vergara said that irrespective of their demand for healthier treats, “Consumers will expect the same taste.”

Chocolate has a versatile range of applications across bakery, pastry and confectionery, among others, Vergara explained, but the company’s first foray into better-for-you formulations “barely made it out of the pilot plant,” she said.

Formulation experts at Luker had to take into consideration complex problems concerning physiochemical parameters, rheology, particle size and stability, Vergara said.

“Ultimately it’s going to impact the sensory profile that the consumer is expecting,” she explained.

She described formulation as a delicate balancing act between a wide variety of interconnected variables. “If we change one, it’s going to impact the others, and it’s going to impact the ultimate quality and experience for the consumer,” she said.

Innovation continues at Luker

Along with its Chocolate with Whey Protein, Luker has developed dark chocolate options with sugar-free and no-added-sugar formulations, plant-based options and hot chocolate and beverage-ready applications.

Luker’s Chocolate with Whey Protein provides 5 grams of protein per 30-gram serving and is marketed as supporting “protein-forward applications while maintaining a smooth sensory profile,” according to the company.

“The whey-protein coverture contains all nine essential amino acids, helping partners enrich the protein content of their final product without needing to re-engineer the whole recipe,” the company said. “The workable coating is an ideal choice for brands developing protein bars, dragées, molding and other functional inclusions.”
