DSM publishes fungus genome to help R&D into enzymes

Netherlands-based DSM has announced the publication of the full
genome for the fungus Aspergillus niger used to produce a
range of enzymes and other compounds for the food industry.
DSM has re-organised its dairy ingredients division into two
distinct categories, reflecting growing demand from customers for
both added value and efficiency-boosting products.
DSM has launched a new clarification pectinase for the apple and
pear juice industry, which it claims promises a faster and more
complete soluble pectin breakdown.
