Sodium reduction has become a defining priority in food innovation.
Global, regional and national health organisations, including the WHO and the US FDA, have urged manufacturers to help consumers lower their sodium intake by up to 30%. With growing global pressure to cut sodium levels, and front-of-pack labelling schemes helping consumers compare the nutritional value of products at a glance, this is an issue that manufacturers cannot ignore. The challenge, however, is reducing sodium without negatively impacting taste or the functions salt performs.
Most sodium-reduction strategies rely on mechanically blending sodium chloride with potassium chloride. For R&D teams, this means rewriting recipes and recalibrating processes, adding not just production costs but risks, too. While these blends can meet sodium targets on paper, they often yield off-flavours, bitterness or metallic notes.
Saltwell® is a breakthrough solution that addresses these problems. It is a natural salt containing 35% less sodium than standard salt, yet delivering comparable taste, texture and functionality. It serves as a clean-label, like-for-like replacement that requires minimal process adjustment, enabling manufacturers to meet public health recommendations and requirements without sacrificing flavour.
Real salt for real food
Saltwell is obtained through solar evaporation and modern sea salt production processes – without vacuum pan evaporation or added chemicals – using hypersaline water resources from the Atacama salt flats in Chile. These waters contain a unique balance of sodium and potassium salts and trace minerals which, when dried in the sun, combine to become a natural mineral in a single crystal structure with 35% less sodium than standard salt.

Because its mineral balance is created naturally rather than by mechanical blending, Saltwell provides a clean, rounded, consistent salty flavour profile comparable to standard salt, with similar functional properties. This combination of lower sodium and excellent taste is exceptionally challenging to replicate by other means.
Saltwell also addresses consumers’ growing tendency to scrutinise ingredient lists. It’s the only solution that reduces sodium while maintaining “salt” on the ingredient panel and clean-label compliance. Switching standard salt for Saltwell enables manufacturers to gain a first-mover advantage, reducing the competitive risk of delays in reformulation processes and offering opportunities to create a premium positioning.
Lower sodium, better taste
Saltwell demonstrates excellent flavour delivery through enhanced perception of saltiness and savoury flavours, without the bitter aftertaste often associated with mechanical sodium/potassium blends. Consumer testing confirms “exact right” saltiness ratings, despite a significant reduction in sodium, with documented improvements in taste intensity, flavour preservation and overall flavour complexity across multiple tested applications.
It can even improve overall flavour by increasing saltiness while reducing sodium. In selected applications, switching 1% standard salt for 1.2% Saltwell results in a saltier, more flavoursome product that is lower in sodium. Saltwell’s uniform crystal structure also performs exceptionally in precision seasoning and electrostatic application systems, providing even coverage and consistent flavour with reduced overall salt use.
In addition, Saltwell can enhance umami perception in some applications similarly to regular salt, which means it can be used to produce, for example, low-sodium yeast extracts.
Saltwell is suitable for use in a wide range of applications where standard salt is used for its taste and functional properties. These include bread and bakery products, processed meats, snacks, cheese and cheese-based products, ready meals and composite dishes, sauces, soups, bouillons and seasonings.
Meat and poultry – sodium levels down, taste scores up
For sodium reduction in meat and poultry applications, the most commonly used salt alternatives are mechanical sodium/potassium blends. These can cause complications including bitter aftertastes, grain separation and textural inconsistencies.
In tested meat and poultry applications, Saltwell delivers excellent flavour with significantly less sodium and a true salt taste, without any bitter aftertaste or grain separation, while maintaining clean-label strategies. It’s suitable for inclusion in both brining solutions and dry blend applications.
Comprehensive testing with both consumer and trained sensory panels across multiple product categories has confirmed Saltwell’s performance in the meat sector. Some of these tests were conducted on behalf of processors to validate performance and flavour before they adopted Saltwell, and all demonstrated acceptability.
In an independent sensory study, 78 participants evaluated finished fermented dry sausages formulated with a conventional NaCl, a man-made KCl/NaCl blend and with Saltwell.1 All salt systems were dosed at the sausage dough stage. Sausages produced with Saltwell showed significantly better ratings for both overall taste and perceived saltiness.

One major European cooked meat supplier achieved a 29% reduction in sodium levels in cooked ham when replacing standard PDV salt 1:1 with Saltwell, resulting in a final sodium content of 340mg per 100g.
Using the same approach, it achieved a 20% reduction in sodium in frankfurter lines. Sensory panels recorded no significant difference in perceptions of taste or texture for either. The reformulated products retained all major retailer listings and qualified for “reduced sodium” front-of-pack claims, supporting a successful range repositioning.

Bread and bakery – lower sodium, high functionality
Salt is important in bakery applications for flavour, gluten formation, rise and cell formation, fermentation and shelf life. Many commercially prepared breads are high in sodium, yet switching from standard salt to man-made sodium/potassium blends can cause bitter, metallic or yeasty off-notes, as well as functionality issues.
Saltwell replaces standard salt in bread and bakery applications on a like-for-like equivalence in terms of taste and technical functionality, while significantly reducing sodium levels. When it replaces regular salt in bread, it maintains the familiar bread taste and supports improved flavour release.

A high-volume sandwich bread manufacturer in North America replaced standard salt 1:1 with Saltwell, achieving a 26% sodium reduction without reformulating the base recipe. Expert and consumer sensory evaluation confirmed no significant differences in flavour or loaf volume, crumb structure or crust colour. Shelf-life parameters were also unchanged, enabling a “reduced sodium” declaration with no impact on production throughput.

Salty snacks – up to 40% sodium reduction
Saltwell has a proven track record of delivering significant sodium reduction in salty snacks without negatively affecting the eating experience. It creates a rounded salt flavour with no bitterness and performs similarly to how salt contributes to technical performance in snacks, from crispness and binding to water activity control. Its consistent mineral structure maintains integrity in baked, fried and extruded snack formats alike.
Saltwell has also demonstrated a strong synergy with modern snack bases including pulse flours, alternative proteins and vegetable-based extrusions, where maintaining flavour and mouthfeel can be challenging.
Saltwell is also available in a unique Microfine grade – the only natural single-grain, 50-mesh salt available globally, enabling up to 40% sodium reduction in a wide range of snacks. These include topical applications such as seasonings and coatings, and dough and extrusion applications including crackers, baked and expanded snacks and masa.

A snack manufacturer using Saltwell via electrostatic seasoning achieved consistent, even coverage and met sodium reduction targets while maintaining “bold flavour” scores on consumer panels. Saltwell’s uniform crystal structure proved a key performance factor in precision application, supporting both flavour intensity and clean-label positioning.

Soups, sauces and condiments – high performance in hot and cold products
Saltiness is a key taste element in soups, sauces and condiments, so delivering lower sodium levels can be difficult without diminishing consumer enjoyment. Furthermore, hot soups and gravies don’t exhibit flavour in the same way as cold sauces and condiments.
Heat potentiates aroma and overall flavour, and most warm products offer meaty, roasted and savoury notes. Cold sauces and condiments don’t release as much aroma as hot foods, so often depend more on salt, tang and bold character notes.
This can create challenges with some sodium reduction solutions, but because Saltwell is a real salt that behaves like standard salt, it can be used as a like-for-like replacement. In hot soups and sauces, it acts as an umami-enhancing agent without the bitterness often associated with sodium/potassium blends. In cold sauces and condiments, Saltwell’s natural, single-grain structure and smooth salty profile provide a cleaner salt flavour that allows other flavours through more prominently.
Saltwell also maintains signature flavours and flavour continuity without any modification or masking, while still reducing sodium by about 30% to 35% versus standard salt. In sensory testing, a tomato ketchup made with Saltwell delivered near-identical results to a ketchup formulated with standard salt, despite being 35% lower in sodium than the control sample.

Simplified labels, superior taste
From a regulatory and labelling standpoint, Saltwell avoids the complications commonly associated with artificial sodium-reduction substitutes and multi-component mechanical mineral blends.
Under EU regulations, it’s recognised as a reduced sodium salt, enabling clean and simple ingredient declarations without the need to list potassium chloride or related E-numbers. In the US and Canada, Saltwell is declared as “sea salt”, supporting straightforward front- and back-of-pack messaging. Such regulatory clarity gives manufacturers and retailers valuable opportunities to position their products as healthier alternatives and demonstrate their commitment to natural ingredients.
Saltwell preserves the flavour that builds long-term loyalty – proving that public-health goals and consumer pleasure can genuinely coexist, and that healthier food no longer requires a sensory sacrifice.
