Frey showed off its low-pressure burger machine because the German firm’s managing director, Heinrich Frey, said the Middle Eastern market was already “full of high-pressure machines that make burger patties”.
“We started with this machine four years ago, but the trend is coming from Europe for low pressure burgers – ones that look homemade, with edges that are rounded. Also, the fibres of the meat are controlled and fall in one direction thanks to an in-line meat grinder. If you eat or barbecue the meat, the fibres all line up and the meat is more juicy, more tender and this is a big, big trend.”
Frey added the market was “highly competitive for high-pressure burgers” and said consumers were starting to call for burgers with more of a rustic look.
