Reducing fat, not taste with Baker's Pure Gold
Baker’s Pure Gold, an ingredient intended to replace butter, is designed for use in laminated pastry, ‘butter’ creams and cake batters.
Its makers, Vandemoortele, have blended a number of oils producing a formulation with whipping properties resulting in batters which can be more aerated compared to butter (up to 10% more).
Free from additives, the result is a lean alternative for the end product with a saturated fat content 10% less compared to using butter.
