Pizza makers are facing increased ingredient costs, Ulrick & Short says
UK-based starch specialist Ulrick & Short has introduced a wheat-based starch intended to improve the texture of pizza sauce.

The ingredient, sold under the brand name U&S Melody, helps improve the pulpiness of tomato paste by binding more water, the company claims. Apart from its thickening properties, the ingredient is also intended to enrich the colour of the sauce, and the company says it is cost-effective, easily dispersible and supports a clean label declaration.

Ulrick & Short director Adrian Short said in a statement: “Pizza manufacturers across all sectors, from chilled and frozen to restaurants and takeaways, are facing challenges from the increasing price of basic ingredients, so any solution that will improve the cost-effectiveness of the manufacturing process will be welcomed.”
