The extract, dubbed Origanox WS-T, is extracted from a plant within the oleaceae family, and adds to other ingredients in the range extracted from oregano and lemon balm. The company says the new ingredient is virtually colourless, meaning it can be used in pale products like poultry, cooked ham and fish, and it is also said to have a neutral taste.
The ingredient is extracted using water only, is water soluble at any temperature and prevents products from tasting ‘warmed-over’, a common problem in precooked products.
Possible applications could include burgers, chicken wings, kebabs, spare ribs, meat pasta fillings and bacon as a pizza topping, the company said.
