Wild has launched completely natural ingredients that can be used as coatings and fillings for ice cream manufacturers.

The ingredients company’s German arm has devised semi-liquid products which can be completely enclosed in ice cream, creating ice cream compositions with a soft center and a texture that can be compared with honey. The products come in fruit flavours as well as what Wild describes as ‘brown’ flavours such as caramel; chocolate; tiramisu; toffee; and cappuccino.

The products can be used in fillings for everything from waffles to ice cream cups. Another approach was to use them as a soft layer between several other layers of ice cream, the company said. The range includes semi-liquid products with chunks of fruit, which create a distinctive mouthfeel and allows manufacturers to play with different layers and textures.

More ‘bite’

The business has also introduced a range of coatings, including one with visible chunks of fruit, giving consumers more “bite”​ with their ice cream. Wild also claims to have produced the first green colour coating, apple kiwi. Exotic yellow or red mixed berry flavours are also available within the portfolio, the company said.

In addition, it could integrate natural fruit granules into the coatings, creating more of a visual impact in supermarket freezer sections, it said. Further options include fruit yogurt coatings in flavors such as blueberry; strawberry; lemon; and forest berries.

“When you eat ice cream, you want to enjoy it,”​ said Inga Haubold, senior product manager, food at Wild. “And manufacturers can offer consumers even more enjoyment by giving them sophisticated products which combine different textures and flavors in a way that is surprising but harmonious.”

Both ranges contain exclusively natural flavors and colors, said Wild.
