Döhler to paint the town red with new natural colour range

German ingredients giant Döhler is to expand its portfolio of natural colours with a range of red hues produced from black carrots.

The 100% natural colour range, for food and beverage applications, are made from black carrot extracts and meet requirements for clean labelling, say the German firm.

Döhler says the new range, known as ‘Red Brilliance’ will provide hues from orange and ruby through to shades of blues.

"Thanks to using state-of-the-art technology, we have been able to optimize the physical processing of the black carrot,” ​explained Christian Benetka, senior product manager colours, of the DöhlerGroup.

He said the colouring concentrates gained from the process “are by far superior to other colours containing anthocyanin in terms of stability and cost-in-use.

“Even the colour spectrum that can be derived from this raw material meets the demands of the market in an optimal way,” ​said Benetka.

The product manager explained that the new range of colour concentrates, to be produced at the companies site in Akkent, Turkey, are also free of sulphur dioxide – which has been suggested to react with a number of ingredients in foods.

Colour cultivation

The ingredients giant said it has signed ‘numerous’ agreements with cultivators in Turkey to secure a consistent supply of the black carrot which is used to source the ingredients.

"This is an important reason why we can deliver standardised qualities,” ​said Benetka, who added that the company controls the entire value added chain.

“From researching and selection of the optimal seeds, to the cultivation and harvesting all the way to processing into a coloring concentrate for customer-specific food and beverage applications.”

“This is a vital requirement in achieving the highest-possible stability in the finished product,” ​he explained.
