New natural red milk colouring is brighter and cheaper, Chr Hansen

A new natural colour for fermented milks is brighter and also cheaper than alternatives on the market, according to manufacturer Chr Hansen.

‘Red Strawberry Fragaria 100 WS’, offers excellent stability​ during the product’s shelf-life, claims the ingredients supplier.

Highly concentrated and water soluble, the liquid contains 15 per cent carminic acid, said Chr Hansen.

The colour has “superior process stability​” qualities, said the firm. This enables a decrease of the pigment concentration by 10 to 20 per cent, compared to standard carmine

By using less of the colouring, the customer can save between seven to 10 per cent, depending on the usage conditions, Regis​ Roubille, Chr Hansen global industry manager told DairyReporter.com.

Enhanced consistency

Due to the solution’s “exceptional processing stability, ​the firm said the ingredient offers a more enhanced colour consistency compared to standard carmine solutions.

This means minimised colour variation from batch to batch at the fruit preparation production facility and in the final yoghurt, according to the company.

The firm said a patent application has been filed for the new red colour, which is produced according to kosher laws.

The solution focuses on the dairy and fruit preparations industries, which have been using natural colours for many years, and we believe that we have set a new natural colour standard for strawberry shades for these industries,”​ said Luc Ganivet, business development director, Dairy and Fruit Preparations, Chr Hansen.

Currently the ingredient is only available in red, but Roubille said the company was likely to roll out other colours in the future.
