Seaweed enters the food formulation palette
A newly formed trade body is looking to take seaweed beyond Japanese cooking and raise awareness of the marine algae as a food ingredient.

Many people may see seaweed as a slimly annoyance on trips to the beach but the Seaweed Health Foundation claims that it can offer a lot more.

Executive director Craig Rose told FoodNavigator.com that seaweed has diverse applications in food that cover salt replacement, satiety, nutrition and taste enhancement.

Rose explained the potential uses of seaweed, outlined the goals of the Seaweed Health Foundation and looked at potential challenges ahead.
