Synergy adds two new lactic yeast enhancers
Synergy is owned by dairy firm Carbery and uses whey fractions produced as a by-product of Carbery’s cheese-making process as the raw material for its yeast extracts.
The Saporesse range is made up of a original and low sodium yeast extracts, enhancers, savoury boosters, brewers yeast extract, dairy boosters and ‘cheese ultimate’ ingredient blends. There are 12 products in the range altogether, including the new additions.
“Each of the 12 offer different product benefits such as improving mouthfeel or salt perception and reducing costs as well as providing different taste profiles,” said a spokesperson.
The two new additions are called Saporesse Plus (241) and Saporesse Plus (242). Both can be used in crisp and snack seasonings, as well as in white and cheese sauces, but a spokesperson told FoodNavigator.com that the decision on which to use is down to the precise flavour required.
Both have a rounded, mature cheese note but the 241 also has a toasted note and is said to enhance overall flavour. The 242, on the other hand, builds mouthfeel and creaminess.
“Product development can come from our in-house development,” said the spokesperson. “The most recent additions to the range were planned, however some products have been added to the range as a result of a particular customer requirement.”
They added that the company is constantly researching new ways to improve the effectiveness of the products and develop new ones to meet future market needs.
Europe and Asia
Ian Butler, innovations director, said they “meet specific needs for cheese profiles in Europe and strengthen our taste enhancement offering”.
The taste enhancers can be used in conjunction with the company’s flavours, and interestingly they also do well in the Asian market. Geoff Allen, export director for Asia, said “most of the dairy and savoury flavours we sell in the far East contain Saporesse”.
Synergy has a technical centre in Thailand and one in Brail – as well as production, R&D and technical facilities in Europe and the US.
The whole Saporesse range is also available in the US.
