Contributing to food safety assurance, Campden & Chorleywood Food Research Association (CCFRA) has produced a CD-Rom to provide food industry managers with a reference tool and training aid on the microbiological safety of foods.

"It works like a website with a front screen that provides access to articles by themes such as microbiological food poisoning and food preservation. Alternatively, the detailed information can be accessed by an extensive index of key words - with the full article just a single click away from the index,"said a CCFRA spokesperson.

The Safefood Library is claimed to contain over 1,000 hypertext-linked short articles providing background on safety issues associated with specific food processing operations and ingredients. The library concentrates on microbiological hazards but also includes related safety issues and information on important chemical and physical hazards.

Users are guided to articles either through the straight A-Z index, or through the list of food preservation and processing operations, the introduction on food poisoning organisms or the chemical and physical food safety operations list.

The library includes food poisoning micro-organisms and their toxins, vehicles for food poisoning and means of prevention and safety issues, such as automatic detection of foreign bodies and potential contamination from cleaning materials.

Apart from coverage of the major pathogens and microbial toxins, the articles are also claimed to highlight which aspects of different preservation systems are critical in assuring food safety.

A demonstration version, showing the themes and containing the full list of indexed terms, can be found at www.campden.co.uk/publ/pubfiles/safefood/topics.htm
