Irish food ingredients company Glanbia ingredients presents at the FiE show in London this week a natural milk mineral complex. Called TruCal the ingredient is extracted from fresh milk. Glanbia claims the new ingredient contains an appropriate balance of minerals, such as calcium, phosphate, magnesium and potassium, for optimal bone health. The company adds that the product has a similar calcium/phosphorus ratio (1.8:1) as that found in the human bone and milk. According to the product information TruCal has a bland flavour with good solubility at acidic pH. Potential applications include nutritional supplements, sports and isotonic beverages, nutritional bars, bakery products and calcium enriched dairy products.
