Ingredients supplier Lyckeby Stärkelsen has developed a new range of products based on potato fibre. The first to be launched is LYCKEBY PM 50. This product is developed for injected poultry products and has a dual-purposes - juiciness and tenderness to improve yield. LYCKEBY PM 50, a potato product, has a neutral taste and, the company claims, enhances chicken flavour release. The product is an alternative to polyphosphate, or other functional ingredients in traditional mixes for brine, but can also be used in combination with them. It can be mixed into the curing brine and apparently performs reliably in brines of different salt contents and injection levels. This new ingredient is a very low allergenic product and is guaranteed GMO free.
