National Starch & Chemical Company, the British food ingredient manufacturer, designed a new type of starch that works well in frozen foods. The functional properties of this type of starch closely resemble those of modified starches. However, the label declaration for NOVATION® 8600 starch is rice starch. Unlike other starches, this product allows a food manufacturer to prepare foods that will readily reconstitute from frozen to produce a desirable texture without gelling or syneresis. The product has been tested in a variety of model and frozen food systems, and has consistently shown performance characteristics similar to those of highly stabilised modified starches. The flavours of foods formulated with NOVATION 8600 starch have an intense taste, and an independent research firm that conducted both consumer and expert panel preference testing confirms this observation. This starch provides a bland flavour profile and a flavour transparency in many foods, which gives food developed the opportunity for potential improvements, reduced flavour usage, or both. This new type of starch has been designed for various food products that undergo moderate heat and shear conditions in processing at neutral pH.
