Low calorie and low fat foods can taste as good as the full fat version, according to global ingredients company Danisco Cultor. The company this week stressed the benefits of its Benefat® ingredients, a structured triglyceride that tastes and functions like fat, yet only delivers 5 Kcal per gram. . "If you're going to make a cookie, cake or brownie, you can use Benefat® and not sacrifice any quality in your products in terms of taste, texture, mouthfeel-the whole sensation of eating a product," claimed Lars Obel, Industry Manager, Bakery, with Danisco Cultor. A GRAS affirmation petition for Benefat® was accepted for filing by the FDA in June 1994. In the USA it can be used in confectionery, dairy products, margarines & spreads, baked goods and snacks. The company maintains that Benefat® has good oxidative stability, and offers the same structural attributes of fat, including tenderness, crumb structure and air cell structure. "With Benefat®, no complicated reformulation is necessary. You can more or less use the same type of formula and just change the fat," Obel said.
