Leading health ingredients supplier DSM has launched a cold water soluble (CWS) version of its CaroPure® beta-carotene. Designed for easy dispersion in aqueous systems, the company claims that the CWS formulation brings improved stability against oxidation and excellent pH, heat and UV resistance. Associated with a range of health benefits, beta-carotene can be used as a clean label functional ingredient (antioxidant and pro-vitamin A) as well as a colourant in a wide range of food products from bakery, confectionery and ice cream to drinks, sauces and seasonings. CaroPure® CWS beta-carotene from DSM is a non-GM, preservative-free product derived from the naturally occurring micro-organism Blakeslea trispora. Dispersible in cold water and soluble in warm water, it can be incorporated into existing formulations without the need for new processes or equipment. Natural fermentation and extraction processes preserve the purity of the CaroPure® range. Containing beta-carotene at a typical concentration of 1%, CaroPure® CWS yields repeatable colour shades varying from yellow to orange depending on the dose used. The health benefits of beta-carotene are well documented: its controlled conversion to vitamin A in the human body makes it the preferred source of this nutrient. As an effective anti-oxidant, it helps protect cells from free radical damage, a key cause of many degenerative diseases. All CaroPure® beta-carotene products from DSM meet FDA and FCC (Food Chemicals Codex) specifications. The CWS formulation conforms with E160a (ii)-carotene.
