DSM launches new enzyme solution for barley brewing

DSM Food Specialties has launched a new enzyme solution called Brewers Compass that allows brewers to produce up to 100 per cent barley beers.

Launched at the Brau Beviale trade fair in Nuremberg, Germany, last week, Brewers Compass aims to offer brewers additional flexibility to lower costs as they come to grips with falling demand in developed markets and look to emerging markets for growth opportunities.

Suitable for brewing beers containing anything between 30 and 100 per cent barley, the new enzyme solution can be used to reduce the cost of producing existing beer brands and enable brewers to target the private label and value segments with new products.

Jeroen van Roon, beer product manager at DSM, explained the key features of Brewers Compass and talked through its development at Brau Beviale in Nuremberg. He said the enzyme solution is not intended to replace malt beers but gives brewers the opportunity to reduce the cost of their beers and add new products to their portfolios.
