Color has a tremendous influence on our purchases of food and beverages. How a product looks impacts the consumer’s purchase and can influence how food and beverages are perceived through taste. In recent years, food colorants have come under increasing global attention for their possible health effects related to allergies, aluminum content and potential behavioral problems in children. Demand for naturally-sourced colors is now deemed as a necessity for some customers. This paper focuses on Kalsec®’s naturally-sourced high stability red colors formulated for a wide range of pH conditions.
