Flavors to watch
According to Sensient, flavors to watch this year are: Chamoy (the smoky heat of ancho chilies with apricot preserves, lime juice, salt and sugar); Charred Coconut; Honeyed Evergreen (pine is softened by honey); Overripe Melon; Pandan (green, nutty and almost bready); Preserved Cherry Blossom; Sassafras Root (a bit like root beer); and Urfa Chile (rich, raisiny, chocolatey, with notes of tobacco and wine).
