Anthocyanin-packed beets turn purple at a neutral or high pH, and go brown when heated, which has historically rendered them unsuitable for applications such as red velvet cakes and cereals, or meant that formulators have had to use large quantities to get the results they want, which can negatively impact flavor and texture.
