Fat sheds stigma
“Consumers are becoming more open-minded toward fat based on growing education and awareness that there are 'good' and 'bad' fats," Zegler told FoodNavigator.
"While this will certainly continue to benefit olive oil as a kitchen staple and key ingredient, there’s also potential for new oil sources that are rich in the so-called “good fats:” monounsaturated and polyunsaturated fats.”
“'Good fat' sources include nut-based oils, coconut oil and even algae oil. In addition to 'good' fat content, some of these emerging oil sources also offer other benefits, such as omega fatty acids or in the case of coconut oil, lauric acid."
Consumer interest in healthy oils is an emerging trend, meaning the challenge lies with companies to present innovative and interesting products to give consumers items that they may not yet be demanding, but would be intrigued by, according to Zegler.
