Lab meat... for less than $300k a burger...
Another packed education session on Sunday explored the potential of cultured meat - whereby cells are taken from an animal and grown in a nutrient-rich medium, harvested, seasoned, cooked, and consumed as a boneless, processed meat, such as you'd find in sausages, burgers, or nuggets.
While his first lab-made burger cost a cool $300,000, significantly scaling up the process of culturing meat using bovine muscle specific stem cells in huge 25,000 liter fermentors could potentially bring costs down to a more modest $65/kg, said Dr Mark Post from the University of Maastricht.
