3D printing brings promise of infinite variety, on demand
While cynics argue that when it comes to industrial food production, 3D printing is still a technology searching for an application; few doubt its potential, or the fact that it’s getting “faster, cheaper, and better” by the day, said Dr Hod Lipson from Columbia University.
Speaking via video link to a packed room on Sunday morning, Dr Lipson said 3D printing is exciting because it can deliver mass customization, or “infinite variety, on demand” without increasing costs or requiring specialist skills, something unique in the food industry, or indeed any industry.
