Many traditional Japanese foods use fermentation rather than chemical preservatives to prolong shelf life, which appeals to consumers because it is more ‘natural’.
Examples include miso, soy sauce, fermented soy beans (natto), pickled vegetables, sweet rice wine (mirin) and black rice vinegar – although the food industry may have trouble warming the Western palate to shiokara (fermented fish)
