Numerous Washington insiders are talking about a possible new candidate for the top food safety post at USDA, Alison Beers from Food Chemical News​ reports. Elsa Murano, a professor of food science from Texas A&M University, appears to be under serious consideration by the Bush administration after being spotted sitting in the agriculture secretary’s office. Murano, however, declined to confirm for Food Chemical News whether she was being vetted for the post, saying only that she was “unsure if I am under consideration.” Meat groups, consumer advocates and especially officials at USDA’s Food Safety and Inspection Service have been eagerly awaiting news of who might be heading food safety programs at the department, Beers continues. The agency has been somewhat rudderless in the last several months because it is unsure what sort of food safety policies the Bush administration wants to endorse, and very little new policy has been making its way out to the public.
