Sales of soy products in the U.S. have now risen above $2.5 billion annually, reports US organisation Foods for the Future. Purchase of soyfoods is expectedto increase by as much as 20 percent a year, with prospects for sales in 2005 at $6 billion. The 1999 health claims approved by the Food and Drug Adminisitration that soy can help reduce cholesterol explain the growing popularity but another contributory factor may be the move of soy from the shelves of health food stores to conventional supermarkets. Dr. Mark Messina, an American nutritionist who specialises in soy remarked, "There are clearly enough reasons now for health professionals to recommend soy to their patients.​"
