Treatt zests up food systems

Flavours company Treatt reported this week that it has added the natural Ethyl Vinyl Ketone (EVK) ex Orange fraction to its product range.

Wholly distilled from orange Citrus sinensis, the company claims the flavour can be used to give a high impact, pungent and fresh top note to flavour creations for a variety of food systems.

A natural fraction of orange waterphase (orange aroma), EVK ex Orange includes the naturally occurring Ethyl Vinyl Ketone (also known as 1-penten-3-one). This chemical is present in natural orange alcohol as found in fresh orange juice. The EVK concentration is approximately 1000ppm.

Treatt maintains that EVK has been reported in fresh tomato and tomato paste, pacific oysters, grape, guava and kiwi fruit volatiles, butter, cooked chicken, peas, cooked potato chips and black tea infusions.
