Tomato packs a double punch

The launch of a tomato-based ingredient with a double functionality is set to appeal to an industry on the look out for ingredients with added health value.

US company LycoRed Natural Products has designed a new version of its lycopene boosted Lyc-O-Mato product.

 

Using proprietary technology, the tomato fibres with natural lycopene still attached are separated from the fruit and dried into a free flowing red powder.

 

According to the company, Lyc-O-Mato Fibers have a lycopene content eight times higher than that of conventional tomato powder and are free of additives.

 

When added to a food product as a colourant, Lyc-O-Mato Fibers should be declared in the ingredient list as 'tomato juice powder colour' or 'coloured with dried tomato juice'.

 

Applications for the product include breads, yoghurt, meats, snacks and nutritional bars.

 

Food manufacturers are starting to realise the true value of natural food colours with additional health benefits. The market can expect to see increasing numbers of ingredients companies meeting these double functionality needs.
