Dairy science comes under the microscope in a new publication to be published in October 2002.

The Encyclopedia of Dairy Sciences, compiled by Hubert Roginski at the University of Melbourne, Australia together with John W. Fuquay from Mississippi State University, and Patrick F. Fox at University College Cork, Republic of Ireland, covers all aspects of dairy science and related food science and technology areas.

 

The publication, published by Academic Press, claims to be extensively cross-referenced and a strong resource for researchers, students and practitioners. The four-volume set includes over 400 articles covering all aspects of dairy science.

 

Included are figures and tables illustrating the text as well as a colour plate section in each volume. The inclusion of "Further Reading" lists at the end of each article provide easy access to further information and a guide into the primary literature.
