This IS the way of the future

The 'visionary' is correct. I saw the light 30 years ago, dropped meat from my diet (against medical advice back then), converted my husband, and labored for years in the weeds to help change public opinion towards accepting vegetarian and vegan consumption. We were "kooks' back then, but I knew the day of a better diet would eventually arrive - and it has! The positive changes that we've witnessed in the food industry during the last three decades time are nothing short of phenomenal, with most of the change coming just within the last 5 - 7 years. The growth curve is exponential and almost nobody bats an eyelash any more when we have to explain that we're vegetarian. Given the increase in concern for the environment and ethics, as well as exploding costs at the butcher's counter, the "trend" towards eating less meat or no meat is going to mainstream and be with us for several generations - hopefully forever. The smart money will be cashing in on that!
