A Fortune 500 food company is looking for a partner to help it develop squeezable 'flowable' pastes that don’t require consumers to use a knife to spread them, but still retain the same eating qualities, according to a posting on NineSigma’s open innovation site NineSights.

In the posting​, NineSigma says: “Food pastes typically require silverware for delivery and consumption. NineSigma’s client wants to deliver an edible paste through a squeezable or similar container.

“The food paste is a low-moisture, high-solids blend consisting of food solids such as carbohydrates and proteins with liquids such as lipids (e.g. flaxseed paste, home-style frosting, nut butters, tahini, etc.). While it may be necessary to change the consistency of the food paste, one must maintain the eating experience of the original paste.”

Food co wants to make ‘shear-stable, flowable fluids’ from food pastes 

The mystery client is looking for technology that will prevent separation of a continuous oil phase after repeated application of moderate shear rates (10-100 1/s); and permit product flow through a squeezable container but maintain a consistency (tackiness, thickness, mouth coating) close to the original food paste.

Possible approaches might include:

 Additives to enhance flow and stability

 Rheology modifiers

 Food paste formulation

 Processing methods

 Packaging solutions

 Particle size distribution
