The FoodNavigator team discusses highlights and observations from day one of the show in Las Vegas.

On day one of the show, highlights included an inspirational keynote speech from PepsiCo's chief scientific officer Dr. Mehmood Khan, who spoke about some of the challenges facing the food industry in the long term, what the future may hold, and why courage is important for running an R&D department.

Meanwhile, new products continue to address demand for pure, natural ingredients, including new stevia blends and natural colors. Clean label continues to top the agenda across large parts of the industry.

And many companies are responding to demand for healthier foods for children too, as the food industry examines what role it can play in improving kids' nutrition and helping to halt the upward trend in childhood obesity.
