As an example we chose a coffee custard with cream topping: starting from a reference product based on traditional ingredients, such as 23% fat dairy cream for the topping and a coffee custard with 3% fat - a cost efficient alternative with comparable product characteristics was developed. The use of high-functionality stabiliser system with low cost-in-use ensures product quality and properties for a coffee custard with only 2% fat and a 14% fat dairy cream topping.
